1/2 x Tin of Chopped Tomatoes
1 x Handful of Chopped Mushrooms
4" of Cut Chorizo
2 x Eggs
2 x Handful of Spinach
2 x Knobs of Butter
(and a little Garlic/Chilli Oil for those that dare)
Heat a Pot and add the Butter add the Mushrooms and season with some pepper, cover for 2 minutes and stir often.
Add the Chorizo, cover and stir for 2 minutes.
Add tomatoes, leave the lid off and stir often for 4/5 minutes until tomato sauce thickens slightly... ( at this point a real Cowboy would add a few dashes of Garlic/ Chilli Oil ;-)
Add the Spinach and make a nest for each of the eggs, then cover and leave alone for 3 minutes, eggs will poach.
Remove from Heat when eggs are cooked and serve, sprinkle with a little parmesan if you wish.... Enjoy
